Ingredients:
- 4 slices whole grain bread- 2 avocados
- 4 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Fresh basil for garnish
Instructions:
1. Toast the whole grain bread slices until golden brown.2. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocado with a fork and add lemon juice, salt, and black pepper. Mix well.
3. Heat the olive oil in a skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness.
4. Spread the mashed avocado mixture over the toasted bread.
5. Place the fried eggs on top of the avocado and garnish with fresh basil.
