A delicious and healthy raw food brunch packed with nutrients.
Preparation Time: 40 minutes
Serving Size: 2 servings
Ingredients:
- 1 dl chia seeds
- 3 dl almond milk
- 2 bananas
- 150 g berries (e.g. blueberries, strawberries)
- 1 avocado
- 1 dl oats
- 50 g nuts (e.g. walnuts, hazelnuts)
- 1 tbsp honey or agave syrup
- 1 tsp vanilla extract
- Fresh herbs (e.g. mint or basil) for garnish
Instructions:
1. Prepare the chia seed pudding by mixing chia seeds and almond milk in a bowl. Allow it to swell in the refrigerator for at least 30 minutes.
2. Chop the bananas and avocado. Mix the bananas into the chia seed pudding and add the vanilla extract.
3. Place the oats on serving plates and pour the chia seed pudding over them.
4. Garnish with berries, avocado slices, and nuts.
5. Add honey or agave syrup for sweetness if desired.
6. Finish with fresh herbs and serve immediately.
