Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh spinach
- 200 g cherry tomatoes
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water.
2. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for about a minute.
3. Add the cherry tomatoes to the pan and cook until they start to soften.
4. Add the fresh spinach and stir until wilted, about 2-3 minutes.
5. Pour the cream into the pan and mix well. Let it simmer over low heat for about 5 minutes.
6. Add the cooked pasta to the pan and stir. If necessary, add reserved pasta water to achieve desired consistency.
7. Stir in the grated Parmesan cheese, salt, and pepper.
8. Serve warm, garnished with fresh basil if desired.
