Cherry Pie (Kirsikkapiirakka)

A delicious cherry pie made with fresh or frozen cherries, perfect for dessert! Preparation Time: 1 hour 30 minutes
Serving Size: 8 slices
Ingredients:
- 2.5 dl all-purpose flour
- 1 dl sugar
- 1/2 tsp salt
- 125 g cold butter, diced
- 4-5 tbsp cold water
- 500 g cherries (fresh or frozen)
- 1 dl sugar (for the cherries)
- 2 tbsp cornstarch
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice
- 1 egg (for brushing)
Instructions:
1. Prepare the dough: In a bowl, mix the flour, sugar, and salt. Add the cold butter and rub it into the mixture until crumbly.
2. Gradually add the cold water until the dough forms. Shape it into a ball, wrap in plastic wrap, and refrigerate for about 30 minutes.
3. Prepare the filling: In another bowl, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice. Let the mixture sit for a while.
4. Take the dough from the refrigerator and roll it out on a floured surface to about 0.5 cm thick. Transfer the dough to a pie dish.
5. Pour the cherry mixture over the crust.
6. Roll out the remaining dough and cut it into strips or create another layer to place over the filling.
7. Brush the top of the dough with the beaten egg.
8. Bake in a preheated oven at 200°C (about 400°F) for 30-35 minutes, or until the pie is golden brown.
9. Allow to cool before serving. Enjoy!
