This refreshing salad is perfect for a light lunch or as a side dish. It combines flavors and colors that evoke summer memories. Preparation Time: 20 minutes

Ingredients:
- 150 g fresh salad mix
- 1 cucumber
- 1 bell pepper (preferably red or yellow)
- 200 g cherry tomatoes
- 100 g feta cheese
- 50 g olives (black or green)
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the salad mix and place it in a large bowl.
2. Cut the cucumber and bell pepper into strips and add them to the salad.
3. Halve the cherry tomatoes and add them to the mix.
4. Crumble the feta cheese over the salad and add the olives.
5. In a small bowl, mix the olive oil and balsamic vinegar, then pour the dressing over the salad.
6. Season with salt and pepper, and toss all the ingredients together well.
7. Serve immediately and enjoy!
