Ingredients:

- 800 g chicken fillets
- 1 cup all-purpose flour
- 2 eggs
- 2 cups panko breadcrumbs
- Salt and pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder
- Oil for frying

Chili Mayonnaise:

- 1 cup mayonnaise
- 1-2 tbsp sriracha or other chili sauce
- 1 tbsp lemon juice
- Salt to taste

Instructions:

1. Prepare the chili mayonnaise by mixing mayonnaise, sriracha, lemon juice, and salt in a bowl. Stir well and refrigerate to let the flavors meld.
2. Cut the chicken fillets into bite-sized pieces.
3. Season the flour with salt, pepper, paprika, and garlic powder in a shallow dish.
4. In a separate bowl, crack the eggs and whisk lightly.
5. Place the panko breadcrumbs in another shallow dish.
6. Dip each piece of chicken first into the flour, then into the egg, and finally coat it with panko breadcrumbs, ensuring they are well covered.
7. Heat oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and crispy, about 5-7 minutes on each side.
8. Remove the fried chicken bites and place them on paper towels to drain excess oil.
9. Serve the crunchy chicken bites with chili mayonnaise on the side.
