Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 400 g chicken breast pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 100 ml cream
- 100 ml chicken broth
- 150 g fresh mushrooms, sliced
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions until al dente. Drain and reserve a little pasta water. 2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for a few minutes until softened.
3. Add the minced garlic and chicken pieces. Cook until the chicken is done and golden brown.
4. Add the sliced mushrooms and cook for a few more minutes until the mushrooms are tender.
5. Pour the cream and chicken broth into the skillet. Mix well and let simmer for a few minutes. Season with salt and pepper.
6. Stir the cooked pasta into the sauce. Add a little reserved pasta water if needed to achieve the desired consistency.
7. Grate Parmesan cheese over the pasta and mix. Garnish with fresh basil before serving.
