A refreshing salad perfect for summer! Preparation time: 10 minutes
Serving size: 4
Ingredients:
- 1 large kohlrabi, sliced very thin
- Cubes of watermelon
- 3 tablespoons good quality olive oil
- 4 tablespoons lemon juice
- 1 clove garlic, crushed
- 1 green onion, chopped
- (Caramelized cashews, optional)
- Salt to taste
Instructions:
1. Slice the kohlrabi very thinly, using a mandoline if possible.
2. Place the kohlrabi slices in a bowl and drizzle with lemon juice, olive oil, crushed garlic, and a pinch of salt.
3. Cube the watermelon and chop the green onion. Add them to the kohlrabi mixture.
4. Mix all the ingredients well together.
5. Let the salad sit for at least half an hour before serving.
6. (Optionally, add caramelized cashews before serving.)
