Berry Cheesecake

A delicious and creamy cheesecake with a fruity berry topping. Perfect for any occasion.
Preparation Time: 30 minutes (plus chilling time)
Serving Size: 10 slices

Ingredients:

- 100 g unsalted margarine
- 15-18 cookies (e.g. digestive, domino, gingerbread)
- 3 eggs
- 1 1/4 dl sugar
- 2-3 tsp vanilla sugar
- 250 g mascarpone or other creamy cheese
- 150-200 g crème fraîche
- Juice of 1 lime
- Juice of 1/2 lemon
- 5 sheets of gelatin
- 400 g berries or ripe fruits
- Sugar to taste

Instructions:

1. Crumble the cookies and mix them with the melted margarine. Press the mixture firmly into the bottom of a springform pan.
2. In a bowl, whisk the eggs, sugar, and vanilla sugar until light and fluffy.
3. Add the mascarpone and crème fraîche, and mix until smooth.
4. Squeeze the lime and lemon juice into the batter and mix well.
5. Soak the gelatin sheets in cold water for about 5-10 minutes. Heat a small portion of the berries or fruits in a saucepan and dissolve the gelatin in it. Add the remaining berries and mix.
6. Pour the berry mixture into the cheese mixture and fold gently.
7. Pour the mixture over the cookie base and smooth the surface.
8. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
9. Decorate with berries before serving and add sugar to taste if needed.
