Marja Mascarpone Cheesecake

A delicious and creamy cheesecake with a buttery biscuit base, topped with fresh berries or ripe fruits. Preparation Time: 30 minutes

Ingredients:
- 100 g unsalted margarine
- 15-18 biscuits (such as digestive, domino, or gingerbread)
- 3 eggs
- 1 1/4 dl sugar
- 2-3 tsp vanilla sugar
- 250 g mascarpone cheese or other creamy cheese
- 150-200 g crème fraîche
- Juice of 1 lime
- Juice of 1/2 lemon
- 5 gelatin sheets
- 400 g berries or ripe fruits
- Sugar to taste
Instructions:
1. Crumble the biscuits and melt the margarine. Mix the crumbled biscuits with the melted margarine.
2. Press the biscuit-margarine mixture evenly into the bottom of a springform pan.
3. In a bowl, combine the eggs, sugar, and vanilla sugar. Whisk until fluffy.
4. Add the mascarpone and crème fraîche to the egg mixture and mix until smooth.
5. Squeeze the lime and lemon juice into the mixture and stir well.
6. Soak the gelatin sheets in cold water for about 5 minutes. Heat 1/2 dl of water in a saucepan and dissolve the gelatin sheets in it. Mix the gelatin into the cheesecake mixture.
7. Pour the filling over the biscuit base and smooth the top.
8. Allow the cheesecake to set in the refrigerator for at least 4 hours, preferably overnight.
9. Before serving, decorate with berries or fruits. Add sugar to the berries if desired.
