A delicious homemade chokeberry jam that captures the essence of traditional recipes. Perfect for spreading on toast or adding to desserts.

Ingredients

- 1 kg sugar
- 100 g peeled almonds
- 1-1.5 kg chokeberries
- 1 dl cognac or juice of 1 lemon
- 5 dl water
- ½ vanilla bean

Instructions

1. In a pot, boil water and sugar together until a clear syrup forms.
2. Carefully skim off any foam that forms on the surface.
3. Allow the syrup to cool slightly.
4. Add the chokeberries and the half of the vanilla bean to the syrup.
5. Simmer the mixture on low heat until it thickens.
6. Finally, stir in the cognac or lemon juice.
7. Pour the jam into clean jars and seal tightly.
8. Let cool and store in a cool place.
