A delicious and warming meat soup, perfect for chilly days. This recipe is inspired by a tasty lunch soup and is easy to prepare. Preparation Time: 1 hour 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 1 yellow onion- 2 tbsp organic butter
- 1 tsp paprika powder
- 1 tsp fennel seeds
- 1 tsp cumin
- 400 g beef or lamb (diced)
- 2 garlic cloves (minced)
- 2 tbsp tomato paste
- 5 dl beef broth (first portion)
- Fresh thyme (generously)
- 2 bay leaves
- 5 dl beef broth (second portion)
- 2 bell peppers (sliced)
- 5 carrots (chopped)
- 1 small sweet potato (peeled and chopped)
Instructions:
1. Finely chop the yellow onion.2. Sauté the onion in organic butter in a pot.
3. Add paprika powder, fennel seeds, and cumin to the pot. Stir for a moment.
4. Add the diced meat and minced garlic. Stir and let simmer covered for about 10 minutes.
5. Add tomato paste, 5 dl of beef broth, fresh thyme, and bay leaves. Let it simmer for one hour.
6. Pour in the second 5 dl of beef broth, sliced bell peppers, chopped carrots, and sweet potato. Gently boil for about 30 minutes or until the vegetables are tender.
7. Serve with sour cream if desired.
