A hearty and comforting summer beef soup packed with fresh vegetables.
Preparation Time: 1 hour 40 minutes
Serving Size: 6 servings
Ingredients:
- 700 g beef stew meat with bone
- 10 new potatoes, quartered
- 5 small new carrots, sliced
- 3 new onions, quartered
- 2 liters of water
- 200 ml cream
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish
Instructions:
1. Place the beef stew meat in a pot and add the water. Simmer over low heat for about 1 hour.
2. Add the potatoes, carrots, and onions to the pot. Continue simmering for another 30-40 minutes, until the vegetables are tender.
3. Season the soup with salt and pepper.
4. Stir in the cream and mix well. Heat through, but do not boil.
5. Serve the soup garnished with fresh herbs.
