A hearty and nutritious beef soup that warms the heart and body. This recipe takes a bit of time, but the result is definitely worth the effort. Preparation Time: 2 hours
Serving Size: 6 servings
Ingredients:
- 600 g beef (e.g., shank or chuck)- 2 medium potatoes
- 3 carrots
- 1 large onion
- 2 celery stalks
- 3 garlic cloves
- 1 bay leaf
- 1 tsp black pepper
- 1 tsp salt
- 1 liter beef broth (or water with beef bouillon cubes)
- 1 tbsp oil for frying
- 100 g fresh parsley (optional)
Instructions:
1. Cut the beef into cubes and brown it in oil in a large pot.2. Peel and chop the onion, carrots, potatoes, and celery. Add them to the pot with the beef.
3. Add the crushed garlic cloves, bay leaf, black pepper, and salt.
4. Pour in the beef broth or water until the ingredients are covered. Add more water if necessary.
5. Let the soup simmer on low heat for about 1.5 hours, until the meat is tender.
6. Check the seasoning and add more salt and pepper if needed.
7. Serve the soup with fresh parsley if desired.
