Korean Beef Soup with Kimchi

Ingredients:
- 500 g beef (like shank or meaty bone)
- 1 liter water
- 200 g kimchi (preferably spicy)
- 2 potatoes, diced
- 1 zucchini, sliced
- 200 g mushrooms, sliced (like button or shiitake)
- 200 g tofu, diced (optional)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 garlic cloves, crushed
- 1 teaspoon salt (to taste)
- 1/2 teaspoon black pepper (to taste)
- Fresh cilantro for garnish (optional)
Instructions:
1. Place the beef and water in a large pot. Bring to a boil and then reduce the heat. Let the broth simmer on low for about 1 hour until the meat is tender.
2. Add kimchi, potatoes, zucchini, mushrooms, and tofu (if using) to the broth. Stir well.
3. Mix in soy sauce, sesame oil, crushed garlic, salt, and black pepper. Stir evenly.
4. Allow the soup to simmer for another 30 minutes until all ingredients are cooked and flavors are combined.
5. Serve the soup hot and garnish with fresh cilantro if desired.
