A delicious potato salad that combines potatoes, kimchi, and sauerkraut, making it a perfect side dish or tasty snack.

Ingredients:
- 600 g potatoes
- 200 g kimchi
- 150 g sauerkraut
- 1 small red onion
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and let them cool.
2. Cut the cooled potatoes into cubes.
3. Finely chop the red onion.
4. In a large bowl, combine the potatoes, kimchi, sauerkraut, and red onion.
5. Add the olive oil, apple cider vinegar, salt, and pepper. Mix well.
6. Allow the salad to chill in the refrigerator for about 15 minutes before serving.
7. Garnish with fresh cilantro before serving.
