Ingredients:
- 4 large bell peppers (red, yellow, or green)- 1 cup cooked rice
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, diced
- 1 can (400 g) crushed tomatoes
- 1 tsp oregano
- 1 tsp basil
- Salt and pepper to taste
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 2 tbsp olive oil
Instructions:
1. Heat olive oil in a skillet and add chopped onion. Sauté the onion until it is soft.2. Add minced garlic and diced zucchini. Cook for about 5 minutes until the vegetables are tender.
3. Stir in the cooked rice, crushed tomatoes, oregano, basil, salt, and pepper. Mix well and let simmer on low heat for about 10 minutes.
4. Cut the tops off the bell peppers and remove the seeds. Fill the peppers with the rice mixture.
5. Place the stuffed peppers in a baking dish and sprinkle shredded cheese on top.
6. Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes until the peppers are soft and the cheese is melted and golden brown.
7. Serve warm and enjoy!
