Chili Sin Carne

A delicious and nutritious vegan chili packed with flavor and nutrients. Preparation time: 30 minutes. Serving size: 4.Ingredients:
- 1 can white beans in tomato sauce (425g)
- ½ bell pepper
- A splash of basil oil
- 2 tsp oregano
- 2 tsp chili powder
- 1 tsp aromatic salt
- 3-4 cloves garlic
- 1 dl soy granules
- 70 g tomato paste
- 1 onion
- ½ red chili
- ½ green chili
- 200 g crushed tomatoes
- A pinch of pepper (five peppers)
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika powder
Instructions:
1. Peel and chop the onion and garlic. Dice the bell pepper and chilis.
2. Heat basil oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
3. Add the bell pepper and chilis, and cook for a few more minutes.
4. Stir in the soy granules and cook for a few minutes.
5. Add tomato paste, crushed tomatoes, white beans, oregano, chili powder, aromatic salt, cumin, cinnamon, paprika powder, and pepper. Mix well.
6. Simmer the mixture on low heat for about 15-20 minutes until all flavors combine and the chili thickens.
7. Serve warm, ideally with rice or bread.
