Serving Size: 4-6 servings
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 2 carrots, diced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- 1 can (400 g) crushed tomatoes
- 1 can (400 g) kidney beans, rinsed and drained
- 1 can (400 g) black beans, rinsed and drained
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic, bell pepper, and carrots. Cook for about 5 minutes until the vegetables start to soften.
3. Stir in the cumin, smoked paprika, and oregano. Mix well and cook for another minute.
4. Add the crushed tomatoes, kidney beans, black beans, and vegetable broth. Stir the ingredients together well.
5. Allow the chili to simmer on low heat for about 20-30 minutes, stirring occasionally. The longer you simmer, the better the flavors develop.
6. Season with salt and pepper to taste. Serve hot and garnish with fresh cilantro if desired.
