A delicious and hearty vegetarian chili that's perfect for a quick meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl dark soy granules
- 4 dl boiling water
- 1 can crushed tomatoes
- 2 cans white beans in tomato sauce
- 1-2 packets chili seasoning mix
- 1 onion (finely chopped)
- 2 garlic cloves (finely chopped)
- 1 bell pepper (diced)
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Soak the soy granules in boiling water for about 10 minutes.
2. Heat oil in a pan and sauté the onion and garlic until golden brown.
3. Add the diced bell pepper and sauté for a few more minutes.
4. Stir in the soaked soy granules, crushed tomatoes, white beans, and chili seasoning mix.
5. Mix well and let simmer on low heat for about 15-20 minutes.
6. Season with salt and pepper to taste.
7. Serve hot with rice or bread.
