Ingredients:
- 400 g ground meat or beef
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 1 potato, diced
- 100 g dried apricots, chopped
- 1 liter beef broth
- 1 tsp ground cinnamon
- 1 tsp cumin
- 1 tsp paprika
- Salt and black pepper to taste
- Olive oil for frying
- Fresh parsley or cilantro for garnish
Instructions:
1. Heat olive oil in a large pot. Add the onion and garlic, sautéing over medium heat until soft.
2. Add the ground meat or beef and cook until browned all over.
3. Stir in the carrots, potato, and apricots, mixing well.
4. Pour the beef broth into the pot and add cinnamon, cumin, paprika, salt, and pepper. Stir to combine.
5. Allow the soup to simmer on low heat for about 30-40 minutes, until the vegetables are tender.
