This delicious meat soup is perfect for a comforting meal, packed with flavor and nutrients.

Ingredients:
- 600 g beef for soup
- 200 g celery root, diced
- 200 g parsnip, diced
- 200 g turnip, diced
- 2 onions, quartered
- 3-4 dl water
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Place the beef in a large pot and add enough water to cover the meat. Add the bay leaf and season with salt and pepper.
2. Let the meat simmer for about 40-50 minutes until tender.
3. Add the diced celery root, parsnip, turnip, and quartered onions to the pot. Cook for another 15-20 minutes until the vegetables are soft.
4. Taste and adjust the seasoning with more salt and pepper if needed.
5. Serve the soup hot, garnished with fresh parsley.
