Spaghetti Aglio e Olio
Spaghetti Aglio e Olio
recipe
A classic Italian pasta dish made with garlic, olive oil, and a hint of chili. Preparation Time: 20 minutes
Serving Size: 2
Ingredients:
- 200g spaghetti - 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 tsp red pepper flakes
- Salt, to taste
- Fresh parsley, chopped, for garnish
- Grated Parmesan cheese, for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. 2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
3. Add the sliced garlic to the skillet and sauté for 1-2 minutes until golden and fragrant. Be careful not to burn the garlic.
4. Stir in the red pepper flakes and cook for an additional 30 seconds.
5. Once the spaghetti is done, reserve about 1/2 cup of the pasta water and drain the rest.
6. Add the drained spaghetti to the skillet and toss to combine with the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water.
7. Season with salt to taste and toss in the chopped parsley.
8. Serve immediately, garnished with grated Parmesan cheese if desired.
