Ingredients:
- 2 cooked chicken breasts
- 4 large tortillas
- 1 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1/2 cup red onion, chopped
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/2 cup lettuce (e.g., iceberg lettuce)
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Fresh herbs (e.g., parsley or basil)
Instructions:
1. Cook the chicken breasts in a skillet over medium heat for about 5-7 minutes on each side until fully cooked. Let cool and shred or slice into strips.
2. In a bowl, mix the Greek yogurt, mayonnaise, red onion, cucumber, bell pepper, salt, pepper, and lemon juice.
3. Add the cooled chicken strips to the mixture and stir well to combine.
4. Take the tortillas and place a handful of lettuce in the center, followed by the chicken salad mixture on top.
5. Fold the edges of the tortilla inward and roll it up tightly.
