A fresh and vibrant mix of grated vegetables dressed with apple juice and herbs. Preparation Time: 15 minutes

Ingredients:
- 1 dl apple juice
- 1 carrot
- 1 kohlrabi
- 1 tbsp canola oil
- 1 tbsp vinegar
- 100 g cabbage
- 0.25 tsp salt
- 1 turnip
- Parsnip to taste
- Fresh herbs
Instructions:
1. Grate the carrot, kohlrabi, cabbage, turnip, and parsnip finely.
2. In a bowl, mix the grated vegetables with apple juice, canola oil, vinegar, and salt.
3. Add the chopped fresh herbs and stir well.
4. Serve as a side dish or appetizer with bread.
