- 400 g chicken fillets - 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 lemon (juice and zest)
- 300 g vegetables (e.g., bell peppers, zucchini, and carrots)
- 200 g quinoa
- 500 ml chicken or vegetable broth
- 100 g feta cheese
- Fresh herbs for garnish (e.g., parsley or basil)
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Season chicken fillets with salt, black pepper, and thyme. Cook the fillets in the skillet for about 5-7 minutes on each side, until cooked through.
3. Squeeze the lemon juice and zest the lemon. Add the lemon juice and zest over the cooked chicken fillets.
4. Chop the vegetables and add them to the skillet. Sauté for a few more minutes until the vegetables are tender.
5. Rinse quinoa under cold water and cook it in chicken or vegetable broth according to package instructions.
6. Serve the chicken and vegetables with the quinoa. Crumble feta cheese over the servings and garnish with fresh herbs.
