A refreshing and delicious dish perfect for summer days, dedicated to my mother who lovingly tended our garden. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 potatoes - 2 carrots
- 1 zucchini
- 1 leek
- 200 g green beans
- 1 liter vegetable broth
- 2 dl cream
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Peel and dice the potatoes, carrots, and zucchini into cubes. 2. Rinse and slice the leek.
3. In a pot, heat the vegetable broth and add the potatoes, carrots, and leek. Cook over medium heat for about 10 minutes.
4. Add the zucchini and green beans. Cook for another 5-7 minutes until all the vegetables are tender.
5. Pour in the cream and mix well. Season with salt and pepper.
6. Allow the soup to heat through for a moment, but do not boil.
7. Serve the soup garnished with fresh dill.
