A refreshing and flavorful salad perfect for summer meals or a light lunch. Preparation time is about 15 minutes, and this recipe serves 4.Ingredients:
- 4 handfuls of fresh salad greens (such as romaine or arugula)
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 10 cherry tomatoes
- 1 avocado
- 1/2 red onion
- 100 g feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the salad greens. Tear them into bite-sized pieces and place in a bowl.
2. Wash and slice the cucumber, bell peppers, cherry tomatoes, and red onion. Add them to the salad greens.
3. Cut the avocado in half, remove the pit, and peel it. Slice the avocado and add it to the salad.
4. Crumble the feta cheese over the top of the salad.
5. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad before serving.
6. Toss the salad gently and serve immediately.
