Beetroot Sauce with Bacon

A delicious beetroot sauce combining the sweetness of beets and the saltiness of bacon, perfect as a side dish for meat dishes. Preparation Time: 30 min
Serving Size: 4
Ingredients:
- 3 medium-sized beetroots - 1 onion
- 150 g bacon
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl fresh basil (chopped)
- 2 dl cooking cream
- 2 tbsp fresh parsley (chopped)
Instructions:
1. Peel and chop the beetroots. Boil them in salted water for about 20 minutes until soft. Drain and puree. 2. Chop the onion and bacon. Heat the butter in a pan and add the bacon. Fry until crispy.
3. Add the onion to the pan and sauté until soft.
4. Sprinkle the flour over the bacon and onion mixture and stir well. Let it cook for about a minute.
5. Add the beetroot puree to the pan and mix. Pour in the cooking cream and stir well.
6. Season with salt, black pepper, and chopped basil. Allow the sauce to simmer on low heat for a few minutes.
7. Remove the pan from heat and stir in the chopped parsley. Serve warm.
