Serving Size: 4 patties
Ingredients:
- 1 cup chickpeas (cooked or canned)
- 1/2 cup rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil for frying
Instructions:
1. Rinse and drain the chickpeas. In a bowl, combine chickpeas, rolled oats, onion, garlic, carrot, cumin, salt, and black pepper.
2. Mash the ingredients with a fork or use an immersion blender until the mixture is smooth but still slightly chunky.
3. Stir in the chopped parsley and mix well.
4. Shape the mixture into 4 patties.
5. Heat the olive oil in a frying pan over medium heat. Fry the patties for about 5-7 minutes on each side until they are golden brown and crispy.
6. Serve immediately with salad or bread.
