A delicious red pesto perfect for pasta dishes, spreading on bread, or adding to salads.
Preparation Time: 15 minutes
Serving Size: Makes about 200g

Ingredients:

- 100 g sun-dried tomatoes
- 1 dl pine nuts
- 2-3 cloves of garlic
- 3 dl olive oil
- 50 g Parmesan cheese
- Paprika to taste
- Black pepper to taste

Instructions:

1. Chop the sun-dried tomatoes and garlic cloves finely.
2. Lightly toast the pine nuts in a pan until they turn golden.
3. Combine all ingredients in a blender or food processor until smooth.
4. Gradually add the olive oil until the pesto reaches your desired consistency.
5. Season with salt, paprika, and black pepper to taste.
6. Serve over pasta or spread on bread.
