This colorful roast beef salad combines flavorful roast beef, marinated red onion, and vibrant green pesto. Perfect as a light meal or side dish.

Ingredients:

- 300 g roast beef
- 1 red onion
- 2 tbsp balsamic vinegar
- 4 tbsp olive oil
- 100 g fresh peas
- 50 g pine nuts
- 1 cup fresh basil
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Salad greens (e.g., arugula or lettuce)

Instructions:

1. Slice the roast beef into thin pieces and sear them in a pan until golden brown.
2. Slice the red onion and marinate it in balsamic vinegar and 1 tbsp of olive oil for about 10 minutes.
3. Prepare the pea pesto: Boil the peas in salted water for a few minutes, drain, then blend the peas, pine nuts, basil, Parmesan cheese, and 3 tbsp of olive oil until smooth. Season with salt and pepper.
4. Arrange the salad greens on a plate, add the roast beef slices, marinated red onion, and pea pesto on top.
5. Serve immediately and enjoy!
