Fresh Pasta with Pesto

A delicious homemade pasta dish paired with a vibrant basil pesto. Preparation Time: 1 hour
Serving Size: 4 servings
Ingredients:
- 1 bunch of basil
- 1 clove garlic
- 80 g pine nuts
- 1 bunch parsley
- 4 eggs
- Approximately 2 dl extra virgin olive oil
- Approximately 7 dl durum wheat flour
- 100 g parmesan cheese
Instructions:
1. Form a mound of durum wheat flour on a clean surface.
2. Create a well in the center of the mound and add the eggs one at a time.
3. Mix the eggs with a fork until incorporated with the flour.
4. Knead the dough by hand for about 10 minutes until smooth and elastic.
5. Wrap the dough in plastic wrap and let it rest for about 30 minutes.
6. For the pesto: Blend basil, garlic, pine nuts, and parsley in a food processor.
7. Gradually add the extra virgin olive oil and process until smooth.
8. Roll out the dough into thin pasta sheets and cook them in salted boiling water for about 3-4 minutes.
9. Drain the pasta and mix it with the pesto.
10. Grate parmesan on top and serve immediately.
