A flavorful rice dish with fresh vegetables and aromatic herbs. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl rice
- 4 dl vegetable broth
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 zucchini
- 1 tsp dried oregano
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Heat olive oil in a large pot and add the chopped onion. Sauté until soft.
3. Add the chopped garlic and continue cooking for another minute.
4. Stir in the rice, ensuring it is well-coated with the oil.
5. Pour in the vegetable broth and add the chopped bell pepper and zucchini.
6. Season the mixture with oregano, salt, and pepper.
7. Allow it to simmer on low heat for about 20 minutes, until the rice is cooked and the liquid is absorbed.
8. Remove the pot from the heat and let it sit covered for a few minutes.
9. Serve garnished with fresh basil.
