A delicious and creamy pasta dish featuring sautéed mushrooms and fresh parsley.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g brown mushrooms (such as cremini, shiitake, or chanterelles)
- 1 tablespoon olive oil
- 1-2 garlic cloves, minced
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 30 g butter
- 300 g ribbon pasta
- 100 ml pasta cooking water
- ½ teaspoon salt
- 1-2 tablespoons lemon juice
Instructions:
1. Boil water for the pasta and add salt. Cook the pasta according to package instructions.
2. Clean the mushrooms, trim the stems, and slice them. Mince the garlic.
3. In a pan, heat the olive oil and sauté the mushrooms until they are golden brown. Add the minced garlic, salt, and black pepper to taste.
4. Chop the parsley and add it along with the butter to the pan. Drain the pasta and add it to the mixture along with a splash of the pasta cooking water. Mix well and serve immediately with lemon juice and grated Parmesan cheese.
