A delicious and hearty minestrone soup that is perfect for both everyday meals and special occasions. This soup is easy to make and allows you to utilize leftover vegetables from your fridge.

Ingredients:

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 potato, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1.5 liters vegetable broth
- 1 can (400 g) crushed tomatoes
- 1 can (400 g) white beans, rinsed
- 100 g pasta (small macaroni works well)
- 150 g spicy sausage, sliced (optional)
- Salt and black pepper to taste
- Fresh basil for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes soft.
2. Add the minced garlic, carrots, celery, and potato. Cook for about 5 minutes until the vegetables start to soften.
3. Stir in the zucchini and bell pepper, and cook for a few more minutes.
4. Pour in the vegetable broth and crushed tomatoes. Bring the mixture to a boil, then reduce the heat.
5. Add the white beans and pasta. Cook for about 10-15 minutes until the pasta is tender.
6. If using sausage, add it to the soup and heat for a few more minutes.
7. Season with salt and pepper. Serve with fresh basil on top.
