Juicy meatballs cooked deliciously in a minestrone soup, making it a perfect choice for a weekday meal.

Ingredients:
- 400 g ground beef
- 1 dl breadcrumbs
- 1 dl milk
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano
- 1 l vegetable broth
- 1 can (400 g) crushed tomatoes
- 2 potatoes, diced
- 2 carrots, sliced
- 1 zucchini, diced
- 1 dl frozen spinach
- 1/2 dl fresh basil, chopped
Instructions:
1. Prepare the meatballs: In a bowl, mix ground beef, breadcrumbs, milk, onion, garlic, egg, salt, pepper, and oregano. Form small meatballs from the mixture.
2. In a large pot, heat the vegetable broth and crushed tomatoes. Add the diced potatoes and sliced carrots. Cook for about 10 minutes.
3. Add the meatballs to the soup and cook for an additional 10-15 minutes, until the meatballs are cooked through.
4. Stir in the zucchini and frozen spinach, cooking for another 5 minutes.
5. Add the chopped basil just before serving.
