Ingredients:
- 1 can crushed tomatoes
- 1 liter vegetable broth
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 can white beans, rinsed and drained
- 200 g spicy sausage, sliced
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- Fresh basil for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing until soft.
2. Add diced carrots and celery, cooking for a few more minutes.
3. Stir in the diced zucchini and cook for a short while.
4. Pour in the crushed tomatoes and vegetable broth, mixing well.
5. Add the sliced sausage, beans, oregano, salt, and black pepper. Let the soup simmer over low heat for about 20–30 minutes.
6. Serve hot and garnish with fresh basil.
