Ingredients:
- 800 g chicken thighs or pieces
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 1 red bell pepper, diced
- 400 g crushed tomatoes
- 200 ml chicken broth
- 100 g green olives, halved
- 1 tbsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot or skillet over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic and diced bell pepper. Cook for a few more minutes.
3. Add the chicken pieces to the pot and brown them on all sides.
4. Pour in the crushed tomatoes and chicken broth. Add the olives, oregano, salt, and black pepper. Mix well.
5. Cover the pot and simmer over low heat for about 40 minutes, until the chicken is cooked and tender. Alternatively, you can transfer the pot to an oven preheated to 180°C (350°F) for about 30 minutes.
6. Serve garnished with fresh parsley.
