Ingredients:
- 1.5 kg Iberico pork shoulder - 200 g chorizo sausage
- 2 cans (about 800 g) crushed tomatoes
- 2-3 garlic cloves, crushed
- 1-2 fresh chilies, chopped
- 1 tbsp smoked paprika
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Sear the Iberico pork shoulder on all sides until golden brown.
3. Add chorizo and cook for a moment until it starts to release its flavor.
4. Stir in crushed tomatoes, garlic, chili, and smoked paprika. Mix well.
5. Season with salt and pepper. Allow the sauce to simmer on low heat for about 3-4 hours until the meat is tender and easily shredded.
6. Remove the meat from the sauce and shred it with two forks. Mix the shredded meat back into the sauce and let the flavors meld for a moment.
7. Serve warm with pita bread or rice, garnished with fresh herbs.
