Ingredients

Pulled Pork:
- 1.5 kg pork shoulder or other fatty pork cut
- Salt
- Black pepper
Burger Buns:
- 240 ml water
- 3 tbsp warm milk
- 2 tsp active dry yeast
- 2.5 tbsp sugar
- 2 eggs
- 720 g bread flour
- 80 g all-purpose flour
- 1.5 tsp salt
- 2.5 tbsp unsalted butter
- (Sesame seeds)
Western Carolina BBQ Sauce:
- 3 tbsp unsalted butter
- 60 g chopped onion
- 480 ml ketchup
- 160 g brown sugar
- 120 ml yellow mustard
- 120 ml apple cider vinegar
- 2 tsp Worcestershire sauce
- 1 tsp Tabasco

Instructions

1. Prepare the Pulled Pork:
- Season the pork shoulder with salt and pepper.
- Roast the meat at 150°C (300°F) for about 5 hours, until it shreds easily with a fork.
2. Make the Burger Buns:
- In a bowl, combine warm water, milk, yeast, and sugar. Let it sit for 5 minutes.
- In a large bowl, mix the flours and salt. Add butter and crumble it into the flour mixture.
- Stir in the yeast mixture and beaten eggs. Mix and knead the dough for 8-10 minutes.
- Allow the dough to rise in a warm place until doubled, about 1-2 hours.
- Shape the dough into 8 balls and let them rise on a parchment-lined baking sheet for another 2 hours.
- Brush the buns with beaten egg and bake at 205°C (400°F) for about 15 minutes.
3. Prepare the BBQ Sauce:
- Melt butter in a saucepan and sauté onion until translucent.
- Add ketchup, brown sugar, mustard, apple cider vinegar, Worcestershire sauce, and Tabasco. Bring to a boil and simmer for 10 minutes.
4. Assemble the Burgers:
- Shred the cooked pork and mix it with the BBQ sauce.
- Slice the burger buns in half and fill them with the pulled pork mixture.
