Ingredients:

- 800 g beef (e.g., chuck)
- 2 tablespoons olive oil
- 2 onions
- 3 cloves garlic
- 3 carrots
- 2 potatoes
- 400 g canned tomatoes
- 200 ml red wine
- 200 ml beef stock
- 1 tablespoon mushrooms
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and black pepper to taste

Instructions:

1. Cut the beef into bite-sized pieces and brown it in olive oil in a large pot over medium heat.
2. Add the chopped onions and garlic, sauté until they are soft.
3. Add the diced carrots and potatoes, stirring well.
4. Pour in the canned tomatoes, red wine, and beef stock. Mix all the ingredients together.
5. Add the mushrooms, thyme, and rosemary. Season with salt and pepper.
6. Cover the pot and simmer on low heat for about 1.5 hours, until the meat is tender.
7. Serve warm, optionally with fresh bread.
