A delicious beef stew marinated in red wine and slow-cooked to tenderness, perfect for any beautiful summer dinner. Preparation Time: 2 hours

Ingredients:
- 1 kg beef (e.g., chuck or shank)
- 2 dl red wine
- 2 tbsp olive oil
- 2 onions
- 3 garlic cloves
- 3-4 carrots
- 2-3 potatoes
- 1 bay leaf
- 2-3 sprigs fresh thyme
- Salt and pepper to taste
- 4 dl beef broth
- 2 tbsp tomato paste
Instructions:
1. Cut the beef into cubes and place it in a large bowl. Pour the red wine over the meat and let it marinate in the refrigerator for at least 1 hour, preferably overnight.
2. Peel and chop the onions, garlic, carrots, and potatoes.
3. Heat the olive oil in a large pot. Add the marinated beef and brown it on all sides.
4. Add the onions, garlic, carrots, and potatoes to the pot. Stir well.
5. Add the bay leaf, thyme, salt, pepper, beef broth, and tomato paste. Mix and bring to a boil.
6. Reduce the heat and simmer the stew covered for about 1.5 hours, until the meat is tender.
7. Serve warm with fresh bread and salad.
