A delicious beef filet dish paired with flavorful black salsify, creating a perfect meal for special occasions.

Ingredients

- 1.25 kg beef filet
- 1.5 tsp salt
- 1 tsp black pepper, freshly ground
- 25 g butter or margarine
- 1.5 kg black salsify
- 0.5 tbsp olive oil
- 2 garlic cloves, crushed
- 1 tbsp fresh thyme (or 1 tsp dried)
- 100 ml red wine
- 100 ml cream

Instructions

1. Season the beef filet with salt and black pepper.
2. Heat the butter or margarine in a frying pan and sear the filet on all sides.
3. Transfer the filet to a baking dish and cook in an oven preheated to 200°C (392°F) for about 20-30 minutes, until it reaches your desired internal temperature.
4. Peel and slice the black salsify into thin rounds. Heat the olive oil in a pot and add the salsify. Sauté until tender.
5. Add the crushed garlic and thyme to the salsify, and cook for a few more minutes.
6. Pour the red wine into the pot and let it simmer until reduced by half. Stir in the cream and mix well.
7. Slice the beef filet and serve it with the black salsify cream sauce.
