A delicious and festive dish where game fillet is wrapped in a crispy pastry crust. This Finnish version of the classic Beef Wellington is simple to prepare. Preparation Time: 1 hour + 30 minutes resting time
Serving Size: 4 servings
Ingredients:
- 600 g game fillet (deer, roe deer, moose, reindeer) - 250 g quark
- 250 g soft butter
- 250 g all-purpose flour (or spelt/rye)
- 1 tsp salt
- 1-2 tbsp cold water
- Salt for seasoning
- Pepper for seasoning
- Fresh thyme for seasoning
- 1 egg (for brushing)
Instructions:
1. Season the cleaned game fillet with salt, pepper, and fresh thyme.2. Sear the fillet quickly in a hot pan until browned on all sides, then let it cool.
3. In a bowl, mix the quark and soft butter. Add the flour, salt, and cold water, and mix until a smooth dough forms.
4. Roll out the dough between two sheets of plastic wrap to about a few millimeters thick and refrigerate for about ½ - 1 hour.
5. Wrap the cooled game fillet in the dough, sealing the edges with cold water or egg wash.
6. Brush the pastry with egg yolk and decorate with strips of dough if desired.
7. Poke small holes in the pastry with a fork.
8. Bake in a preheated oven at 220°C (428°F) for about 10 minutes. Use a digital thermometer for precise doneness.
