Ingredients:
- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain the pasta and reserve a little cooking water.
2. Heat a frying pan over medium heat and cook the bacon or pancetta until crispy. Add minced garlic and cook for another minute.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper. Add a bit of reserved cooking water to make the mixture more fluid.
4. Combine the cooked pasta with the bacon in the pan and mix well. Remove the pan from the heat.
5. Pour the egg mixture over the pasta and stir quickly to ensure the eggs cook lightly and create a creamy sauce.
6. Serve immediately, garnished with fresh parsley and additional cheese if desired.
