A delicious tender beef filet seasoned with herbs, perfect for special occasions. Preparation Time: 15 minutes

Serving Size: 4 servings
Ingredients:
- 1 kg beef tenderloin (coeur de filet)
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 50 ml red wine (optional)
Instructions:
1. Take the beef tenderloin out of the refrigerator and let it come to room temperature for about 30 minutes before cooking.
2. Preheat the oven to 200°C (400°F).
3. Season the filet generously with salt and black pepper on all sides.
4. Heat olive oil in a skillet over medium heat and add the minced garlic. Sauté until the garlic is golden brown.
5. Add the chopped rosemary and thyme to the skillet and mix well.
6. Sear the filet in the skillet for about 2-3 minutes on each side until it develops a beautiful golden brown crust.
7. Transfer the filet to the oven and roast for 15-20 minutes, or until it reaches your desired internal temperature (about 55-60°C or 130-140°F for medium).
8. Remove the filet from the oven and cover it with foil. Let it rest for about 10 minutes before slicing.
9. (Optional) Use the pan drippings and red wine to make a sauce before serving.
10. Slice the filet and serve warm. Enjoy your delicious meal!
