Ingredients:
- 800 g beef tenderloin
- 2 tbsp olive oil
- 3 garlic cloves, crushed
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 100 ml red wine
- 200 ml beef broth
- Salt and pepper to taste
- 200 g cherry tomatoes
- 1 tbsp butter
Instructions:
1. Heat olive oil in a frying pan over medium heat.
2. Season the beef tenderloin with salt and pepper. Add the meat to the pan and sear both sides until golden brown, about 3-4 minutes on each side.
3. Add the crushed garlic, rosemary, and thyme to the pan and cook for an additional minute.
4. Pour in the red wine and let it simmer for a few minutes until the alcohol evaporates.
5. Add the beef broth and cherry tomatoes, allowing the mixture to simmer on low heat for about 15-20 minutes, until the meat is cooked to your liking.
6. Remove the meat from the pan and let it rest under foil for 5 minutes before slicing.
7. Stir in the butter into the sauce and mix well.
8. Serve the sliced meat with the sauce poured over it.
