Spicy Fennel-Tomato Pasta

This delicious and spicy fennel-tomato pasta combines flavorful ingredients and is the perfect meal for busy weeknights. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 teaspoon chili powder (or to taste)
- 1 bay leaf
- 1 teaspoon salt
- 1 fennel bulb, sliced
- 400 g canned crushed tomatoes
- 1 tablespoon orange zest
- 250 g penne pasta
- Fresh parsley for garnish
Instructions:
1. Cook the penne pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until softened.
3. Add crushed garlic, chili powder, bay leaf, and salt. Cook for another couple of minutes.
4. Add sliced fennel to the pan and cook until softened.
5. Pour in the crushed tomatoes and add the orange zest. Let it simmer for about 10 minutes.
6. Mix the cooked pasta into the sauce. If needed, add a little reserved pasta water to prevent the pasta from drying out.
7. Remove the bay leaf and serve the pasta garnished with fresh parsley.
