Delicious pulled pork tacos topped with sweet pineapple, fresh tomato, avocado, and sour cream. Perfect for a weekend treat or a gathering. Preparation Time: 3.5 hours
Serving Size: 4-6 servings
Ingredients:
- 4 pork chops - 2.5 tablespoons nut oil
- 2 tablespoons muscovado sugar
- 1 teaspoon salt
- 1 teaspoon paprika powder
- 0.5 teaspoon cumin
- Chili to taste
- 1 cup pineapple (diced)
- 1 tomato (diced)
- 1 avocado (sliced)
- 1 cup sour cream
- Hot sauce (to taste)
Instructions:
1. In a bowl, mix together the nut oil, muscovado sugar, salt, paprika, cumin, and chili.2. Place the pork chops in a roasting pan stacked together and spread the spice mixture over and between the meat.
3. Cover with a lid and bake in a 120°C (248°F) oven for about 2.5-3 hours, until the meat falls off the bone.
4. Remove the bones and chop the meat into small pieces. Let the juices absorb into the meat.
5. Finely shred the meat with a knife and sauté in a pan for a moment, adding more oil if necessary.
6. Serve with tortillas and top with pineapple, tomato, avocado, sour cream, and hot sauce.
